Satish is a great fan of Thai Yellow Curry. So tried it with Thai curry paste(with available vegetables) and it turned out to be great success. It was very yummy. We loved it.
Ingredients
Vegetables - 4 cups (cut in strips)
(You can use the vegetables of your choice - Carrot, beans, cauliflower, capsicum, mushroom,broccoli, Potato)
Onion - 1 medium
Paneer/Tofu - 1 cup
Coconut milk - 1 can (13.5 oz) to 1.5 can
Vegetable Broth - 1/2 cup
Thai Yellow curry paste - 1/2 cup
Garlic paste - 2 tsp
Red chilli - 3
Soya Sauce - 3 tsp
Brown Sugar - 11/2 tsp
Olive oil - 3 tsp
cilantro leaves - 2 tsp
Spring onion - Green part - 1/4 cup
Salt - as per taste
Preparation
Soak the red chilli in a spoonful of water.
In a deep skillet, heat olive oil and add garlic paste, thai yellow curry paste and saute for few seconds
Add vegetable broth and coconut milk (1 can) to it and keep stirring
Once it starts boiling, add onion and the vegetables which takes long time to cook. Like this, add all the vegetables and cook until tender. Add some more coconut milk if required.
Add paneer/tofu. Add the red chilli seeds/water to the mixture. Add salt.
Add some more coconut milk if required.
Once all the vegetables are tender, add sugar and soya sauce and stir it well
Garnish with spring onion and cilantro.
