Avial

I was thinking that Avial is something only "cooking experts" can do. I dont know why i had that thought. Recently had it in my friend's home and everyone said its so easy to make. Sathish is a great lover of avial, so making my mind to prepare it one day. And that day has come. Yes, its so simple to make avail. I missed it all these days. Inime adikadi avial thaaan :)

Ingredients
Vegetables as per your preference - 3/4 cups
(I used Carrot, Yam, Beans, Potato, Raw Plaintain)
Onion - chopped 1/4 cup
Green chillies - 2
Coconut - 3 tbsp  or coconut milk - 4 tbsp
Water - to cook veggies
Coconut oil - 3 tsp
Curry leaves - 1 sprig
Curd - 1/2 cup
Cumin/Jeera - 1 tsp

Preparation
Cook all the vegetables together in a cooking pan with little water and 4 drops of coconut oil. (Dont add too much water, may be 1/2 cup should be fine). Close the lid and let the veggies cook.

Grind together onion, coconut, cumin, green chillies with little water. Once the veggies are cooked, add the paste and mix it well and cook for another 5 minutes. Add curd and mix it well for a minute and switch off the stove.

Now the secret ingredient - Add coconut oil and mix well and close the lid, open it when eating. It will smell good and taste delicious.

You can make it more gravy by adding water/curd.
