Colacasia fry (Seppangkizhangu varuval)

This is one of Sathish's favourite dish... whenever i do this, it will be over in an hour.

Ingredients
Seppankilangu (Colacasia) - 10 pieces
Chilli Powder - 1 1/2 tsp
Coriander powder - 1/2 tsp
Turmeric powder - 1/4 tsp
Coconut - 3 tsp
Jeera/cumin - 1/4 tsp
Sombu/fennel - 1/4 tsp
Oil - 4 tsp
Salt -as per taste

Preparation Method

Cook the colacasia covered for about 15 mins. I generally microwave it. Check often, to see if its cooked, otherwise it will become soggy. It should be firm and not soggy. Peel the skin and cut lengthwise.

Grind together coconut, turmeric, chilli powder, coriander powder, cumin, fennel, salt with little water.

Heat oil in a pan, and put all the cut pieces into it. Fry for a minute and then add the paste and mix well. Make sure that the paste is spread on the pieces.

Fry it till the colacasia becomes very crisp. Add oil whenever required. It will atleast take 15 minutes to get the crispness.

(I forgot to take a photo of this fry)
